What’s the limit on carbs, calories, and sugar for diabetes?

My dad has type 2 diabetes. He’s had it for a few years but after spending some time in the hospital recently for nearly slipping into a diabetic coma, he finally has decided to take it seriously (thank GOD).

I’ve been trying for years to help him out by making sugar-free treats, since he’s quite the sweet tooth, but I’m realizing I need to learn more. When I look at the nutrition labels, I don’t know what’s healthy and what’s not. What’s considered an “okay” amount of calories and carbs? I know the lower the better, but how low is that? It seems impossible to avoid them altogether.

Specifically this is bothering me right now because he’s got a birthday coming up and I’m throwing him a surprise party, and I would love to make him some chocolate cupcakes. I think he should be able to enjoy his favorite food on his birthday, just not at the cost of his health. What amount of calories, carbs, and sugar is safe for him to eat in a dessert?

I don’t know if this makes a difference, but he’s 46, he doesn’t exercise but he walks a LOT during the day at work. He’s had his blood sugar around 100 for the past couple weeks.
The reason I’m making cupcakes is so he’s not tempted to eat more than one serving size. I plan on making just enough for all the people at the birthday party. :)
For the desserts I try to use stevia rather than aspartame or other fake sugars.

Poaching Peaches – Sugar Syrup or water?

When is it best to use a sugar syrup for poaching peaches and when is it ok to simply blanch in water for a few minutes.

I’m making peaches with Zabaglione as a lighter dessert for Christmas because my brother is diabetic and I want to limit the sugar. I’ve just experimented with some very small peaches & boiled them for 5 minutes – they cooked though & seemed fine so wonder why I might need to add sugar to the water. I also wanted to add some lemon or orange rind to the water or syrup as a flavouring. What do you think?

My little niece has juvenile diabetes. Whenever she goes to birthday parties she wants cake. It’s hard to make her understand she can’t have any. Her b-day is coming up she will be 6. I would like to bake her a cake a regular birthday cake but sugar free. She loves icing. Does anyone know of a recipe?

Where can I find a recipe for a sugar free Easter Egg?

My husband wants a Fruit and Nut Easter Egg. Every recipe I’ve found, uses 2 boxes of powdered sugar Is there is any sugar free subsitute, for powdered sugar? I know Splenda can be used in place of regular sugar, but what can you replace powdered sugar with? I can’t even find a sugar free Fruit and Nut Egg to buy, just fudge, peanut butter, coconut. and vanilla. Can anyone help me?
