i need the name of a cookbook for diabetics,something that non-diabetics would eat, food with flavor that is healthy and doesn’t cost a mint to make. fresh veggies are getting boring! i live in a big truck so my cooking ability is a little limited,i do have a slow cooker type stove.

I am looking for a cookbook with simple -easy to find ingredients- recipes.
My dad has type 2 diabetes. He’s overweight and I need to start cooking for him so that he can lose weight and at the same time control his diabetes immediately because his doctor called and told me if his diet is not controlled he could have a heart attack.
I am thinking of buying one of these books, but I was wondering if anyone has tried any of them and knows which one is the best.
Diabetes Cookbook for Dummies by Alan L. Rubin
The Easy 4-Ingredient Diabetic Cookbook by Sally Hunt
All New Complete Step-by-Step Diabetic Cookbook
I could use recipes I find online, but it’s a hassle because I don’t have a printer and I can’t cook with my computer in the kitchen.
Any help would be appreciated!

I work at a place were we take care of adults with disabilities. we recently found out that one of the women that we take care of is diabetic. She has to cut her carbs way down. less than 65 a meal and 20 a snack. She loves foods like lasagna, pizza with the thick crust, pasta. Now she hasn’t been able to eat any of that because the carbs are too high. The other staffs’ answer is to buy boxed meals like what she likes to eat because they have lower carbs. It breaks my heart because this woman will cry and say that she wants home made food. I want to find a diabetic cookbook that gives a wide varitey of low carb recipes for all meals ( breakfast, lunch, and dinner) and also some snack ideas. I want to take this book to my boss and show that we can still give this woman a good homecooked meal without going over her carb limit. I truly think this would make the woman that I take care of very happy, and hopefully cut down on some of the deppression, even if only a couple of us staff actually cook from the cookbook. Does anyone know of any cookbooks like this? I would really like to find one that lists the nutrential (mainly the carbs in each dish) value on the recipe page since we have to document what she ate and exactly how many carbs she eats. Please help me try to make a young woman’s day. It would really mean alot to me and her.

This was a great little cookbook with some fabulous recipes. My copy was distributed by Lifescan – a diabetic blood meter company. It was/is a compilation of recipes by Catfish Hunter (baseball hall of famer) who is a diabetic. I loaned it out to someone and forgot who so now I cant find it! Does anyone have this free handout? If so, what is the recipe for the black bean soup? I remember ingredients of Black Beans, Chicken Broth, Celery, Cheyenne Pepper, Sour Cream….
