Well, a friend of mine has been on exchange for four months, and she’s coming home next Saturday, and I was thinking of making her a surprise breakfast- type thing, with all of our friends and family. Except….. I’m not quite sure what to make her. She’s a vegetarian, and she’s also diabetic, so no extravagantly sweet things, please. I need a few easy and quick breakfast recipes for next Saturday. Please leave the recipes below (I was also wondering if you guys could give me a good dessert recipe for someone with diabetes. Some form of dessert that’s not too sweet). Thank you very much!
xx

I tried making this cheesecake twice:
http://lowcarbdiets.about.com/od/desserts/r/lcarbcheesecake.htm
One with a generic liquid artificial sweetner and the second time with Sweet N Low. Both times the taste was horrible, and I think it’s because of the sugar substitutes. I heard today that Splenda is usually good for baking.
This is like the 5th cheesecake I’ve attemped to make, and was wondering if any experienced bakers out there, would using Splenda instead make the taste not so horrible? I know it’s not sugar free, but I read that it was ok for diabetics, so…

I have a very lg. crowd coming here for Thanksgiving dinner. I will have help with cooking and serving but, my favorite uncle is diabetic and I want to make a special dessert for him myself. What sweeteners would be good to use for cooking and can I cook ahead? I have heard you can’t cook with certain artificial sweeteners. Also, something I could freeze so that he can take some home with him. Would appreciate your input.

My grandfather is a diabetic and I want him to be able to enjoy dessert with the rest of us at Thanksgiving. Please give me your best desserts suitable for diabetics. (something other than just plain angelfood cake!)

Most recipes for baked goods reccomend substituting something like Splenda for half the sugar in a recipe. Is there any way to have it substitute all the sugar?
I’m not diabetic or anything and I rarely indulge myself like this, but I just like to cut down when I can.

I want to make cookies for a diabetic friend.
The recipe needs to contain no sugar at all.
I’ve been to Splenda’s website, and they offer a few completely sugar-free recipes, but only a couple that sound appealing (Deep Chocolate Shortbread, for example). What’s your favorite sugar-free cookie recipe — cookies that taste real and a recipe that’s reliable?
Thanks for sharing!

Do these packages have the amount of sugar substitute you need to use to be equivalent to sugar? Thanks!
Does equal come in the large bags though for baking? I’ve seen splenda, but can’t recall if i’ve seen equal in the large bags

Last year my husband found out he’s type 2 diabetic and ever since I have been trying to find good tasting ‘sweet’ treats for him that we can make at home. I’m a bit leery after trying a recipe for diabetic peanut butter cookies and ended up with severely oily peanut butter pie dough. Lack of baking talent is not the issue (I’ve regularly made homemade chiffon/angel food cakes from scratch) but I don’t want to have to wade through a sea of bad recipes.
